Smoked Cheese and Red Pepper Omelette

Omelettes are the perfect breakfast (or lunch, or dinner!) dish, and this smoked cheese and red pepper omelette is absolutely delicious.

You get sweetness from the red bell pepper, that deep smokiness from the cheese and then the rich eggs – it’s delightful and one of my favourite ever breakfasts.

Omelettes are quick and easy to make. You can get one on the table in less than 15 minutes. The only real bit of ‘skill’ you need is folding it over, but to be honest if it fails, it might not look as good but it will still be incredibly tasty.

I like to make omelettes as a weekend breakfast treat, but they are fantastic for dinner too. This red pepper omelette with some chips and salad on the side will make the whole family happy.

Ingredients, Substitutions and Variations

  • Red bell pepper – you can use any colour bell pepper you like, but I prefer red bell pepper with the smoked cheese because the sweetness is such a wonderful balance.
  • Eggs – 2 medium eggs are needed for this recipe. If you’re very hungry, you can add an extra egg.
  • Olive oil – this omelette is best cooked in olive oil, but you could sub for butter or vegetable oil.
  • Smoked cheese – I used a really delicious smoked Lancashire cheese I got from my local cheese shop, but any smoked cheese will do. A smoked goats cheese would be fabulous!

Top tips

  1. Use a non stick frying pan Omelettes are infinitely easier when you use a non stick frying pan. There is nothing worse than having to scrape stuck egg from a pan!
  2. Cut the peppers as you like The smaller you cut the pepper, the more delicate the pieces will be. The larger you cut it, the crunchier the pepper will be – it is up to you what you prefer.
  3. Cook to your liking You don’t need to follow the instructions below to the letter. If you like your omelettes to be slightly runny, take it out of the pan sooner. If you prefer them fully cooked through, leave for a little longer. It’s up to you!

Perfect for breakfast, lunch or dinner, this smoked cheese and red pepper omelette is a balanced, flavourful delight.

Ingredients
  

  • 1 tbsp olive oil
  • ½ red bell pepper
  • 2 eggs
  • 25 g smoked cheese

Instructions
 

  • Finely chop the bell pepper. Grate or crumble the cheese.
  • Crack the eggs into a bowl, add a pinch of salt and pepper and mix with a fork. Add the bell pepper and stir well.
  • Heat the olive oil in a frying pan over a medium heat. Pour in the egg mixture, move the frying pan around so that the egg mixture covers the bottom, then sprinkle the cheese over the top. Cook for 2 minutes until the egg has started to solidify.
  • Fold the omelette in half, press down and cook for another two minutes. If you like, you can turn it over to cook more thoroughly on both sides.
  • Tip the omelette out of the frying pan onto a plate. Done!
