If you’re looking for a quick, nutritious and cheap breakfast, this apple and sultana porridge is for you. It’s vegan, dairy free and delicious too – give it a go!

Porridge sometimes has the reputation of being a lengthy job in the morning, but that’s not true at all. This porridge can be made in the microwave, in the bowl you’re going to eat it from, making it seriously quick and easy.

Apple and sultana are a perfect match with sweetness and tartness and work perfectly here.

This is a dairy free porridge – you can absolutely make porridge with water and still have plenty of flavour! I prefer it to porridge made with milk (of any kind).

Ingredients, Substitutions and Variations

  • Porridge oats – I use the cheapest own brand ones that my local supermarket sells. There’s absolutely no need to buy branded oats – the mark up is massive and the product is really no different. Buy cheap!
  • Sultanas – you could use raisins instead, but as I’m making this a cheap breakfast, and sultanas are less expensive than raisins in my country, sultanas it is!
  • Apple – apples are a wonderful topping for this porridge, but you could also use pear.
  • Maple syrup – for sweetness. You could switch for honey if you are not vegan, or omit altogether if you don’t want any extra sweetness.

Top tips

  1. Remember 1:1

    Always use one part porridge oats to one part water when cooking porridge in the microwave. If your porridge is too thick afterwards according to your taste, add a splash more water and stir well.

  2. Don’t cook too long

    This porridge only needs 2 minutes in the microwave. Any longer and it could burn.

  3. Eat immediately

    Don’t be tempted to make this in advance – porridge is best when cooked and eaten straight away.

Ingredients
  

  • 1 small cup porridge oats
  • 1 small cup water
  • 40 g sultanas
  • 1 half apple
  • 1 tsp maple syrup

Instructions
 

  • Pour your porridge oats into a bowl and cover with the water. Top with the sultanas and put in the microwave on max for 2 minutes.
  • Meanwhile, slice your half apple thinly. The second half can go in the fridge for tomorrow.
  • When the porridge is cooked, remove from the microwave, add the maple syrup and stir well. Top with the sliced apple and enjoy!
