The mashed avocado is mixed with chilli oil, giving it a kick that goes perfectly with the salty bacon and crisp hash browns.
The bagel is lightly toasted in the oven so it holds nicely, making a wonderful breakfast sandwich.
Bagels are also highly portable, which is handy. If you fancy taking this on the go, simply wrap it in foil and take it with you.

Avocado and Bacon Bagel – The Ingredients
- Bagels – though you can make this breakfast sandwich with any bread, it’s absolutely at its best when you use bagels. Use plain bagels.
- Hash browns – use frozen hash browns for simplicity. They get nice and crisp in the oven.
- Bacon – use some good quality bacon. Smoked or unsmoked – it’s up to you, just make sure it’s good quality otherwise it won’t crisp up properly.
- Avocados – use ripe ones with soft flesh, otherwise you won’t be able to mash it properly.
- Chilli oil – use your favourite one.

Top Tips
- Cooking the hash browns and bacon The bacon only needs 7-8 minutes in the oven (less if your oven is particularly ferocious. Pop it in about 2/3rds of the way through the hash brown cooking time and keep an eye on it – you want crispy bacon, not burnt bacon!
- Making the avocado Mash the avocado together with your chilli oil. Taste, then adjust as necessary – you might want more chilli oil and some salt, but do this according to your tastes.
- Get ahead Because of the avocado, this bagel shouldn’t be reheated. However, you can eat it cold and it’s just as nice. Wrap in foil and chill until you want to eat.

Avocado and Bacon Bagel

- 4 frozen hash browns
- 4 rashers of bacon
- 2 medium avocados
- 2 tbsps chilli oil
- 2 plain bagels
Instructions
- Preheat the oven to 200 degrees Celsius. Put the hash browns on a baking tray and put in the oven for 35 minutes.
- After 25 minutes, put your bacon in the oven on the same baking tray. Cook for the final 10 minutes, keeping a close eye on the bacon (remove it from the oven if it gets too crisp).
- Meanwhile, cut the avocados in half and remove the stones. Scoop the flesh into a bowl and add the chilli oil. Mash together with a fork.
- Slice the bagels in half. Place them in the oven for the final 2 minutes of the hash brown cooking time.
- To serve, remove the bagels from the oven. Spread the base with the avocado and chilli oil mix, top each one with 2 slices of bacon and 2 hash browns. Finish with the remaining bagel half. Enjoy!
