For dishes that are easy to make and perfect for any time of the day, a cheese omelette is hard to beat.
Learn how to make this and you’ll have a fantastic dish in your repertoire that you can whip up whenever you’re hungry. It uses just 3 ingredients (not counting salt and pepper), so is a perfect store cupboard recipe – AND it’s ready in less than 10 minutes.

I often have this cheese omelette for breakfast when I want something quick and delicious, but I also regularly eat it for dinner – particularly when I’m eating alone – with a salad on the side.

Ingredients, Substitutions and Variations
- Olive oil – you can also cook your omelette in vegetable oil or butter.
- Eggs – the fresher your eggs, the better.
- Grated cheese – I use cheddar, you can use any grated hard cheese. Mozzarella works well too.
Top Tips
- The frying pan – It’s best to use a non stick pan if you’re new to cooking omelettes. There’s nothing worse than a stuck omelette!
- Cooking your omelette – You can cook your omelette exactly to your liking – if you want it slightly runny, give it less time in the pan.
- Get ahead – Omelettes don’t keep well, so this is best made fresh. They only take 5 minutes to cook.
Simple Cheese Omelette

Ingredients
- 1 tablespoon olive oil
- 2 eggs
- 25 grams grated cheese
Instructions
- Crack the eggs into a bowl. Whisk with a fork until well combined, then add salt and pepper.
- Heat the oil in a frying pan over a medium heat. Pour the eggs into the pan, then move the pan around to make sure that the eggs form an even, thin layer over the whole base of the frying pan.
- Sprinkle the cheese evenly on top of the egg.
- Cook for 2-3 minutes, until the eggs is mostly set, then use a fish slice to fold the omelette in half. Cook for another 1-2 minutes, until cooked to your liking, then use the fish slice to transfer the omelette from the pan onto a plate.
