The beauty of puff pastry is that it turns the simplest fillings into something that feels much more exciting. Cheese, leftover meat, vegetables, pesto, chutney, onions, herbs, cooked chicken, roasted veg – they can all become tarts, parcels, pinwheels or little bites with very little effort.
If you’re making your own version, the main thing is not to overload the pastry. Too much wet filling can stop it crisping properly, and nobody wants a soggy bottom. Keep fillings fairly dry, leave a border where you need one, and bake until the pastry is properly golden.
