The BEST Breakfast Burrito

Everyone loves a breakfast burrito, and this one is hands down the best one!

It uses a simple trick for cooking the egg and cheese to make a sturdy and delicious wrap, which is then stuffed with sausage, mushrooms and red bell peppers to make a filling and delicious breakfast.

They’re also highly versatile, so feel free to get creative with the fillings – I have given some ideas below.

Breakfast Burrito – The Ingredients

  • Olive oil – for cooking the eggs. You can also use vegetable oil.
  • Tortilla wraps – you can use white or whole grain, whichever you prefer.
  • Eggs – see the tips below for how we cook the eggs.
  • Cheese – I used cheddar, any melty cheese will work.
  • Sausages, mushrooms, red bell pepper, soured cream – these are the fillings. You could also use bacon, avocado, black beans, tomatoes.

Top Tips

  1. Cooking the eggs

    When you are cooking your eggs, be sure to add the cheese and wrap to the top as quickly as you can. This will ensure that the egg sticks to the wrap. Likewise, don’t cook for too long – they really do need just 20 seconds when the wrap is on there.

  2. Wrapping the burrito

    There are a million videos on YouTube that show how to wrap a burrito, but at its simplest, you just need to fold over two ends and then roll. Quickly wrap the whole thing in your foil.

  3. Get ahead

    Make this first thing in the morning, bake in the oven and take with you to eat later during the day. It can also be made the night before, kept in the fridge and baked in the morning. Don’t make it further in advance than this.

Ingredients
  

  • 4 tsps olive oil
  • 4 tortilla wraps
  • 4 eggs
  • 100 g cheese grated
  • 4 sausages cooked
  • 4 chestnut mushrooms
  • 1 large red bell pepper
  • 8 tsps soured cream

Instructions
 

  • Preheat the oven to 180 degrees C. Lay 4 sheets of tin foil – just larger than a wrap – on your kitchen counter.
  • Crack one of the eggs into a bowl. Add a pinch of salt and pepper and whisk with a fork.
  • Heat one teaspoon of olive oil in a nonstick frying pan. Pour in the egg and move the pan around until the egg coats the bottom. Sprinkle over 25g cheese then press one of the wraps on top. Cook for 20 seconds, then ease out of the pan and lay egg side up on one of the sheets of foil. Replace with the other three eggs and wraps.
  • Chop the mushrooms into small cubes. Do the same with the red bell pepper. Slice the sausages.
  • Sprinkle one mushroom, quarter of the pepper and one sausage in a line on top of one of the wraps. Top with 2 teaspoons of soured cream. Wrap the burrito and wrap the foil tightly around it. Repeat with the other three burritos.
  • Put the burritos in the oven and cook for 5 minutes, until warmed through.
