If you’re looking for something a bit different for breakfast that’s still delicious and extremely easy and quick to put together, these feta baked eggs are for you!

Similar to an omelette but baked in the oven, these feta baked eggs puff up giving them a beautiful soft texture that’s perfect with a slice of toast.

Feta and chives are a match made in heaven – plus they’re tasty enough to not need lots of extra ingredients. In fact, this dish uses only 4 ingredients!

Give them a go and watch them become your go to breakfast – they only take 15 minutes to make!

Ingredients, Substitutions and Variations

  • Chilli oil – chilli oil makes all the difference here, adding just a touch of warmth to the eggs. If you like, you can switch for a good olive oil.
  • Feta – crumbly feta is the perfect texture for this dish. You could substitute with a crumbly goats cheese.
  • Chives – chives have that gorgeous oniony, peppery flavour and tie this dish together. Use fresh if you can.
  • Eggs – you’ll need two eggs per person.

Top Tips

  1. Getting fluffy eggs

    Baking the eggs makes them rise and get fluffy, but for super fluffy eggs makes sure that you whisk well at the beginning, getting plenty of air into the mixture.

  2. Runny eggs

    I’ve cooked my eggs here so that they’re just set and cooked through. If you prefer a runnier egg, take them out of the oven after 6-7 minutes.

  3. To serve

    These are great with hot buttered toast, or you could also have with a side salad. Basically, any way you’d normally serve an omelette!

Ingredients
  

  • 1/2 tbsp chilli oil
  • 40 g feta
  • 1 tsp chopped fresh chives
  • 2 eggs

Instructions
 

  • Preheat the oven to 220 degrees Celsius.
  • Drizzle the chilli oil over the bottom of a small ovenproof dish.
  • Crumble the feta into a bowl. Add the chives. Crack in the eggs and whisk together until well combined.
  • Pour the egg mix into the ovenproof dish. Place in the middle of the oven and cook for 10 minutes until risen, fluffy and golden.
