Finely chop the bell pepper. Grate or crumble the cheese.
Crack the eggs into a bowl, add a pinch of salt and pepper and mix with a fork. Add the bell pepper and stir well.
Heat the olive oil in a frying pan over a medium heat. Pour in the egg mixture, move the frying pan around so that the egg mixture covers the bottom, then sprinkle the cheese over the top. Cook for 2 minutes until the egg has started to solidify.
Fold the omelette in half, press down and cook for another two minutes. If you like, you can turn it over to cook more thoroughly on both sides.
Tip the omelette out of the frying pan onto a plate. Done!
