If you love mince pies and cookies, you’re going to love these mince pie cookies! With white chocolate and ginger, they’re absolutely packed full of flavour.
These would be perfect if you want to make a handmade edible gift this Christmas, or if you want to do some baking with the kids over the festive season. They are also wonderful cookies to leave for Santa on Christmas Eve, I heard he loves them!
They’re very simple to make with no special techniques and cook in just 10-12 minutes too.
You can also make the cookies ahead and freeze them – just be sure to defrost thoroughly before eating.
Mince Pie Cookies – The Ingredients
- Butter – use salted butter – this will help to bring out all of the other flavours. If you use unsalted butter, add 1/4 teaspoon of salt when you add the flour. Make sure that your butter is soft so that it is easy to mix with the sugar.
- Caster sugar – you could also use light brown sugar for a darker colour.
- Egg – use a medium or large egg.
- Mincemeat – use any mincemeat you like.
- Plain flour – use plain, white flour for these cookies.
- Bicarbonate of soda – this is what gives the cookies that little puff when they come out of the oven.
- Ground ginger – you could switch for ground cinnamon or allspice.
- White chocolate – these cookies are at their best with white chocolate! You could use dark or milk chocolate, but white chocolate complements the mincemeat so nicely.

Mince Pie Cookies

- 125 g butter softened
- 75 g caster sugar
- 1 egg
- 4 tablespoons mincemeat
- 180 g plain flour
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon ground ginger
- 150 g white chocolate broken into small chunks
Instructions
- Preheat the oven to 180 degrees C. Line two baking trays with baking parchment.
- Put the butter and sugar into a large bowl and whisk until light and fluffy. Crack in the egg and mix until combined.
- Add the mincemeat – stir.
- Tip in the flour, bicarbonate of soda, ground ginger and white chocolate. Stir until well combined.
- Use a tablespoon to spoon 10 balls of the mixture onto the baking trays. Make sure there is plenty of space between the balls for when they spread in the oven.
- Bake for 10-12 minutes until crisp at the edges but still soft in the middle. Remove from the oven and allow to cool before eating.
