Porridge is a deliciously comforting breakfast- but when that porridge tastes like Christmas? Absolute winner! Give this Christmas cake porridge a try – it’s quick and easy and ticks all the boxes for a brilliant breakfast.
I often have porridge in the morning – I make it in the microwave, as per this recipe, and it’s a warming breakfast ready in just two minutes.
This particular recipe takes your ordinary porridge to another level. It uses the flavours of Christmas cake to create a sweet, moreish and incredibly tasty bowl of goodness.
The recipe is for one bowl – to make it for more people, just multiply the recipe by however many people there are. I’d recommend making each person’s porridge in their own individual bowl, rather than cooking it all together.
Ingredients, Substitutions and Variations
- Porridge oats – any kind will do. I always recommend buying the cheapest porridge oats in your supermarket – they’re all the same, there’s no point in paying more.
- Mixed fruit – dried mixed fruit brings that Christmas cake feel. You could substitute with raisins, sultanas or you could even add some glace cherries in!
- Walnut halves – walnuts are delicious and filling in this porridge. You could also use almonds.
- Ground cinnamon, nutmeg and cloves – these spices work incredibly together!
- Honey – for a little sweetness. You can omit this if you want to, or substitute for maple syrup if you’d like to make it vegan.
Top Tips
- Don’t overcook
Two minutes is the perfect cooking time for this – don’t cook for longer.
- Try milk
I make my porridge with water, as per this recipe. If you want to, you can substitute the water for milk.
- Get the right consistency
If the porridge is too thick for you when you remove it from the microwave, just add a splash more water and stir well.
