When I’m looking for a quick, easy and filling dinner, I make these pastrami bagels with cheese, hash browns and pickles.
They’re simple, tasty and you can use as much or as little English mustard as you like (I like lots – my eyes need to water!)
These bagels are based on New York style bagels, but I’ve added hash browns into mine. I’m not quite sure when I developed this part of the recipe (I’ve been making these for a long, long time), but I really enjoy the soft and slightly crisp potato in the middle of the bagel. It works really well.

Pastrami Bagels – The Ingredients
- Hash browns – frozen hash browns are absolutely fine here. I use two hash browns per bagel.
- Bagels – plain bagels are best for this recipe because the filling is so tasty.
- Pastrami – use a couple of thin slices of pastrami per bagel. If you can’t get hold of pastrami, some good smoky bacon (fried or baked) would work instead.
- Cheese – sliced cheese is perfect. I use Edam, but any good melty cheese will work.
- Pickled mini cucumbers – I use my own pickled mini cucumbers. They’re slightly spicy and work beautifully here. If you don’t have time to make your own, though, you can use any pickled baby cucumbers.
- English mustard – provides the heat! Use as much or as little as you like. I love a good slathering.

Top Tips
- Baking the bagels
These bagels are baked in the oven, wrapped in foil, for about ten minutes for the cheese to get nice and melted. Do use foil – it keeps everything an even temperature.
- Get ahead
You could make these the day before, wrap in foil but don’t cook. Then, when you’re ready to eat, bake them in the oven.
- Variations
If you don’t have any frozen hash browns, try using potato waffles instead!

Pastrami and Cheese Bagels

- 8 frozen hash browns
- 4 bagels
- 8 slices of pastrami
- 8 slices of Edam
- 12 slices of pickled baby cucumber
- 4 tsps English mustard
Instructions
- Preheat the oven to 200 degrees C. Put the hash browns on a baking tray and cook for 30 minutes, until golden. Remove from the oven and leave the oven on.
- Slice the bagels in half. Lay two pastrami slices over the bottom of each one, followed by two hash browns. Top with two slices of cheese and three pickle slices. Spread one teaspoon of English mustard (or more or less according to taste) over each of the top bagel slices. Put the bagel slices on top of the bagels to make a sandwich.
- Wrap each bagel in foil. Bake in the oven for 5-7 minutes until warmed through and the cheese is melting. Enjoy immediately.
