This caprese sandwich has all the flavours of Italy – pesto, mozzarella, basil and tomato in focaccia.

It’s a classic combination for a reason – it’s absolutely delicious. Caprese salad is very popular, and when you take those flavours and put them in focaccia, you end up with one of the best sandwiches that there is.

Using pesto instead of butter just supercharges this sandwich. You’re going to love this upgrade to your standard lunch time snack!

Caprese Sandwich – The Ingredients

  • Focaccia – you need to use focaccia for this sandwich. The salt and olive oil from the focaccia adds amazing seasoning to the sandwich. You can buy your focaccia, or make it yourself. It’s very easy to make if you follow my recipe for Rosemary Sourdough Focaccia.
  • Pesto – again, you can make your own or just use a jar for ease. Use green pesto.
  • Mozzarella – fresh, creamy mozzarella is key here. Use a good ball.
  • Tomatoes – Italian tomatoes are sweet and delicious – here in the U.K., they’re often not as good. Try to buy the best tomatoes you can get, you really will taste the difference.
  • Basil – fresh basil will bring that beautiful Italian flavour.

Top Tips

  1. Compiling the sandwich – Laying the basil over the top of the pesto will create a barrier between the tomato and bread – this will help to prevent the sandwich from getting soggy.
  2. Get ahead – This sandwich can be made the night before. Wrap in foil and store in the fridge when made.
  3. Alternatives – If you like, you could add some cooked chicken or beef to this sandwich.

Focaccia stuffed with pesto, basil, tomatoes and mozzarella

Ingredients
  

  • 1 loaf focaccia
  • 8 tsps green pesto
  • 200 g mozzarella
  • 100 g tomatoes
  • 20 g fresh basil

Instructions
 

  • Slice the focaccia into 4 equal portions, then cut each one in half through the middle.
  • Slice the tomatoes thinly. Slice the mozzarella.
  • Spread 1 tsp pesto over each of the focaccia slices, as you would butter in any other sandwich.
  • Layer basil leaves over the top of the pesto.
  • On the four base pieces, evenly place the mozzarella slices and tomato slices. Top with the top focaccia pieces.
