Halloumi is one of those ingredients that can make dinner feel instantly more exciting.
You slice it, throw it in a hot pan, and suddenly – GOLDEN CHEESE. Crispy edges, soft middle, salty deliciousness. What’s not to love?
The only question then becomes…what do you serve with it?
Because halloumi is quite rich and salty, it works best alongside things that bring freshness, crunch or brightness to the plate. Think crisp salads, roasted vegetables, fluffy grains or warm flatbreads ready to scoop everything up.
I cook with halloumi all the time (it’s one of my absolute favourite quick dinner ingredients), so I’ve tried it with just about everything over the years. Some combinations are good. Some are…less good.
Below are the ones that actually work – the things that make halloumi shine rather than compete with it.

If you want the short answer, the best things to serve with halloumi are:
- roasted vegetables

- yoghurt or lemon sauces
Halloumi is salty and quite rich, so it really benefits from things that add freshness or crunch to the plate. A simple salad, some roasted vegetables or a bowl of couscous instantly turns a few slices of halloumi into a proper meal.
Now let’s look at some of the combinations that work particularly well.

Fresh Salads That Work Beautifully With Halloumi
One of the easiest (and honestly best) ways to serve halloumi is with a big, fresh salad.
The contrast between warm, crispy halloumi and cool crunchy vegetables is absolutely lovely. Add a bright dressing and suddenly something very simple feels quite special.
A few combinations I come back to again and again are:
- Tomato and Herb Salad – This is a classic for a reason. Sweet tomatoes, good olive oil and plenty of herbs work beautifully with halloumi. The acidity of the tomatoes cuts through the richness of the cheese and balances everything nicely. Simple. Fresh. Always good.
- Cucumber and Mint Salad If your halloumi is particularly salty (which some brands definitely are!), this is a brilliant pairing. Cool cucumber, fresh mint and a squeeze of lemon make the whole plate feel lighter. It’s the sort of combination that makes you feel slightly virtuous even though you’re eating fried cheese.
- Halloumi Couscous Salad – If you’d like something a bit more filling, couscous is a fantastic partner for halloumi. The grains soak up all the lovely flavours from the cheese and any dressing you add. Suddenly your salad feels like a proper dinner rather than a side dish. You can try my halloumi couscous salad.
- Halloumi Salad Bowls – Another favourite of mine is building a big salad bowl around crispy halloumi. Add some roasted vegetables, a handful of grains, maybe a punchy dressing…and dinner is basically sorted. My halloumi salad bowl with satay dressing is a very good example of this sort of meal – quick, filling and packed with flavour.
Vegetables That Go Brilliantly With Halloumi
Halloumi absolutely loves vegetables.
Something about golden salty cheese and sweet roasted veg is just a very happy combination. The vegetables soften and caramelise, the halloumi crisps up, and suddenly the whole tray smells AMAZING.
If you’re wondering what vegetables to serve with halloumi, these are the ones I reach for most often.
- Roasted Peppers – Sweet roasted peppers are a dream with halloumi. They soften, go slightly jammy in the oven and balance the salty cheese beautifully. Add a squeeze of lemon and a drizzle of olive oil and you’ve got something very good indeed.
- Courgettes – Courgettes cook quickly and soak up flavour really well, which makes them ideal alongside halloumi. Slice them thickly, roast or grill them, and let them get those slightly golden edges. They pair brilliantly with the smoky flavour of the cheese.
- Aubergine Aubergine and halloumi together feel very Mediterranean and very delicious. Roast aubergine cubes until they’re soft and slightly caramelised, then scatter crispy halloumi over the top. Add some herbs and suddenly it feels like something you might eat on holiday.
- Roasted Tomato and Halloumi – Roasted tomatoes are another lovely pairing. As they cook they become sweet and slightly sticky, which contrasts beautifully with the salty cheese. Simple? Yes But also VERY GOOD.

Grains and Carbs That Turn Halloumi Into a Proper Dinner
Halloumi on its own is lovely…but add something starchy alongside it and suddenly it feels like a proper, satisfying meal.
These are the grains and carbs that work particularly well.
- Couscous – Couscous and halloumi are a natural pairing. The grains soak up all the lovely juices from the vegetables and dressing, while the halloumi adds saltiness and texture. It’s quick, filling and extremely reliable as a dinner combination.
- Rice – Rice works especially well if your halloumi is part of a saucy dish. Something like my butter halloumi curry absolutely cries out for a bowl of fluffy rice to soak up that creamy sauce. Or you could try my Halloumi Rice (Easy Biryani-Style One-Pan Dinner).
- Bulgur Wheat – Bulgur wheat is a little nuttier than couscous and works beautifully in warm salads. Add roasted vegetables, some herbs and crispy halloumi and you’ve got a hell of a good meal.
- Orzo – Orzo is another favourite of mine with halloumi. It’s comforting, quick to cook and brilliant at soaking up flavour. My one pan halloumi orzo is a very good example of how well this combination works.
Sauces That Make Halloumi EVEN BETTER
Add a really good sauce and things get very exciting indeed. Because the cheese is salty and rich, sauces that bring freshness, acidity or a little sweetness tend to work best. Here are a few favourites.
- Lemon and Olive Oil Dressing – Sometimes the simplest option is the best one. A squeeze of lemon, a drizzle of olive oil and a little salt and pepper brighten the whole plate and cut through the richness of the cheese beautifully.
- Harissa Yoghurt If you want something a bit punchier, harissa yoghurt is excellent with halloumi. The creamy yoghurt cools the spice slightly, while the harissa adds warmth and depth. Drizzle it over roasted vegetables and halloumi and you’ll be very pleased with yourself.
- Honey and Chilli – Sweet, spicy and salty is one of the most satisfying flavour combinations around. A drizzle of honey and a pinch of chilli flakes over crispy halloumi is ridiculously good.
- Satay Dressing – Peanut satay sauce and halloumi might sound slightly unexpected, but it works beautifully. The creamy, nutty sauce coats the crispy cheese and turns a simple salad bowl into something much more interesting.
Bread, Wraps and Things to Scoop With
Another very good way to serve halloumi is simply in bread!
Flatbreads, wraps and pitas are perfect for stuffing with crispy halloumi and whatever vegetables or sauces you happen to have around. It’s casual, slightly messy, and always very satisfying.
- Pitta Bread – Warm pitta bread stuffed with crispy halloumi, salad and yoghurt sauce is a fantastic quick dinner. My halloumi pittas are a good example of this – quick, filling and packed with flavour.
- Flatbreads – Flatbreads are perfect for piling with roasted vegetables, sauces and plenty of halloumi. They’re also excellent for slightly chaotic “build your own dinner” situations where everyone assembles their own plate.
- Wraps – Wraps are brilliant if you want something quick and portable. Fill them with crispy halloumi, crunchy vegetables and a good sauce and lunch is sorted. Or try halloumi fajitas!

Halloumi Dinner Ideas (When You Want Something More Substantial)
If you want halloumi to be the centre of a proper dinner rather than just a side, there are plenty of excellent ways to do it.
Some of my favourites include:

Unexpected Pairings That Work Surprisingly Well
Once you start cooking with halloumi a lot (which I clearly do…), you discover some slightly surprising combinations.
Some of the best ones involve a little sweetness.
Watermelon
Salty halloumi and sweet watermelon are a fantastic combination. Add a little mint and suddenly you’ve got a salad that feels very summery and fresh.
Honey
A drizzle of honey over crispy halloumi is one of those tiny things that makes a big difference. Sweet, salty and crispy all at once. Try it over some halloumi schnitzels.
Roasted Fruit
Roasted peaches, nectarines or even grapes can work beautifully with halloumi. It sounds unusual, but the sweet fruit and salty cheese balance each other perfectly.
