This delicious, creamy chorizo and halloumi pasta is one of those dishes you have to make when you want to feel like you’re getting a lovely, warm hug.

Ingredients, Substitutions and Variations
- Chorizo – use your favourite chorizo ring. I like to use a spicy one for this recipe because the heat goes so well with the halloumi and cream – but it’s all down to your personal preference.
- Halloumi – this recipe calls for a lot of halloumi, but trust me – it’s absolutely worth it.
- Tomato puree – tomato puree brings the richness that gives this its butter halloumi flavour.
- Double cream – you can substitute with single cream, but you will end up with a more watery sauce.
- Pasta – I used tortiglioni. Rigatoni or penne would also work well, as would shell pastas that scoop up all of that yummy sauce.
- Peas – I used frozen peas to bring a bit of sweetness and freshness to cut through the richness. Other vegetables that would complement the dish nicely include spinach, broccoli and courgette.

Top Tips
- Cooking the chorizo and halloumi
Be patient when you are cooking the chorizo and halloumi. Some water may come out of your halloumi as you cook it – that’s fine, just keep cooking, stirring often, until your halloumi and chorizo has wonderful golden gnarly bits.
- Cooking the pasta
Be sure to cook your pasta until it is al dente – no more than that. This means that it will soak up more of that delicious flavour when you add the sauce.
- Get ahead
You can make the sauce ahead and freeze it for up to three months. Defrost, heat thoroughly and then mix with cooked pasta.

Chorizo and Halloumi Pasta

Ingredients
- 225 g chorizo ring
- 400 g halloumi
- 2 tbsps tomato puree
- 150 ml double cream
- 300 g dried pasta
- 200 g frozen peas
Instructions
- Bring a large pan of salted water to the boil and add the pasta. Cook according to packet instructions until al dente. Add the peas for the last minute. Drain and reserve one cup of the cooking water.
- Start by removing the skin from the chorizo ring and discarding it. Cut the chorizo into small 1-2cm size chunks. Cut the halloumi into pieces a similar size.
- Put the chorizo into a large frying pan over a medium heat. Cook for 2 minutes, stirring often, until it starts to release the oil.
- Add the halloumi to the frying pan and cook for 10 minutes, stirring often (but gently, so that you don’t break up the halloumi too much) until it is golden brown.
- Add the tomato puree, reduce the heat to low and stir. Add 100ml water, stir to mix and let it reduce a little, then add the double cream. Stir gently. Taste the sauce and season – you probably won’t need any salt, but you may want to add pepper.
- Combine the pasta, peas, pasta water and sauce. Mix well, then let it sit for 2 minutes before serving.
