White pizza is an underrated joy, and this version with salami and courgette is the perfect, delectable balance in every mouthful.

A white pizza is a pizza without a tomato sauce. The base can be a bechamel sauce or – like this pizza – it can have no sauce at all. I used two layers of mozzarella instead to make sure it has the consistency it needs.

Courgettes are also underutilised on pizzas. Slice them thinly, put them on the pizza raw and they will be absolutely perfectly cooked when you come to eat.

Salami and Courgette White Pizza – The Ingredients

  • Pizza dough – use your favourite pizza dough. I made my sourdough pizza dough here and it was perfect. If you don’t fancy making your own dough, you could also use premade pizza bases.
  • Grated mozzarella and fresh mozzarella– I used two different types of mozzarella here. The grated mozzarella is sprinkled on the base first, as an initial cheesy layer, and the fresh mozzarella is dotted on top to finish it off perfectly.
  • Salami – you could use chorizo if you prefer, but peppery salami goes beautifully with the rich cheese.
  • Courgette – smaller courgettes work best for this.
  • Oregano – optional, but it adds a nice finish.

Top Tips

  1. Cooking your pizza

    Keep a close eye on your pizza. You don’t want the toppings to burn – likewise, you don’t want the middle to be soggy. Take it out of the oven when your pizza is bubbling, golden around the edges with melted, crisp cheese.

  2. Adding a tomato sauce

    If you prefer a tomato sauce on your pizza, that’s fine. You could make the tomato sauce from my Homemade Sourdough Pizza and use it on this pizza – just omit the first layer of cheese.

  3. Get ahead

    This pizza is best eaten immediately as soon as it’s cooked, but I won’t judge you for eating the leftovers cold the next morning!

Ingredients
  

  • 2 balls of pizza dough or ready made pizza bases – see notes above
  • 100 g grated mozzarella
  • 60 g sliced salami
  • 60 g courgette approx half a medium one, thinly sliced
  • 100 g fresh mozzarella
  • 2 tsps dried oregano

Instructions
 

  • Put two large baking trays in the oven and preheat it to 250 degrees Celsius.
  • Roll out your pizza dough into two large circles approx 5mm thick. Place each one onto a sheet of baking parchment.
  • Sprinkle one pizza with 50g grated mozzarella, leaving a 1cm border clear around the edge. Repeat with the other pizza.
  • Put half of the salami evenly on each pizza. Do the same with the courgettes. Tear the fresh mozzarella into small pieces and put half evenly on each pizza.
  • Sprinkle 1 tsp oregano over each pizza.
  • Remove one baking tray from the oven. Slide one of the pizzas (on the baking parchment) onto the tray. Return to the oven. Do the same with the other pizza.
  • Cook for approximately 10 minutes, until golden around the edges and cooked through.
