Greek Style Flatbread Pizzas

If you’re looking for a quick and easy dinner idea that the whole family will love, you won’t go wrong with these Greek style flatbread pizzas.

Topped with a range of Greek ingredients – black olives, feta, juicy tomatoes and oregano – and built up on a simple flatbread base, you’ll have dinner ready in a few minutes.

You could use ready made pizza bases here, or make your own pizza dough, but I often have flatbreads in the freezer so this makes it an excellent store cupboard meal. Plus, flatbreads are far easier to get hold of than readymade pizza bases.

Use any Greek ingredients you have available to add on top. If you’re not vegetarian, some anchovies would work perfectly!

Ingredients, Substitutions and Variations

  • Flatbreads – use any kind of flatbreads you like. Of course, the larger they are, the larger your individual pizzas will be.
  • Tomato puree, garlic powder, mixed herbs – these make your basic tomato sauce. You could use a proper tomato sauce, slow cooked – but we’re going for speed here, and this is tasty!
  • Grated mozzarella– grated mozzarella works nicely as a base cheese for pizzas. You could switch it for any mild, melty cheese you prefer.
  • Black olives, feta, sliced tomatoes, sliced baby sweet peppers – as mentioned above, you can chop and change these toppings for any Greek toppings you like.
  • Fresh oregano – optional, but it is really delicious.

Top Tips

  1. Don’t go OTT on the pizza sauce

    Because we’ve used tomato puree for the pizza sauce, it has a strong taste. You only need a thin layer.

  2. Cheese, then toppings

    Always put your mozzarella down first (on top of the sauce), then your toppings – not the other way round.

  3. Keep an eye out

    Flatbreads can catch in the oven quickly! Make sure you’re watching closely so that they don’t burn.

These Greek style pizzas on a flatbread base topped with black olives, feta, tomatoes and sweet baby peppers will be a hit with the whole family.

Ingredients
  

  • 4 flatbreads
  • 4 tbsps tomato puree
  • 1 tsp garlic powder
  • 2 tsp dried mixed herbs
  • 120 g grated mozzarella
  • 80 g pitted black olives cut in half
  • 80 g feta crumbled
  • 4 baby plum tomatoes sliced
  • 2 sweet baby peppers sliced
  • 1 tbsp fresh oregano optional

Instructions
 

  • Preheat the oven to 200 degrees Celsius.
  • Spread 1 tbsp of tomato puree onto each flatbread, going close to the edges in as even a layer as you can.
  • Sprinkle each flatbread with 1/4 tsp garlic powder and 1/2 tsp dried mixed herbs.
  • Sprinkle 30g grated mozzarella over the top of each one.
  • Next, arrange 1/4 of the olives, tomatoes and peppers evenly over each of the flatbreads. Crumble 1/4 of the feta over each one. Top each one with 1/4 of the fresh oregano.
  • Place the flatbreads on baking trays – you will probably need two. Put in the oven for 10 minutes until the mozzarella is melted and the flatbreads are starting to turn golden. Enjoy!
