These spiced pear muffins make a really tasty breakfast or snack.
They’re packed full of pear flavour, with lovely warming mixed spice too, and they’re so easy to make too. In fact, they’re almost impossible to get wrong.
I like to make a batch of these every few weeks and pop them in the freezer. They keep in the freezer for up to three months- just take a couple out the night before for breakfast in the morning.

The Ingredients
- Butter – use salted or unsalted butter. You could also use margarine or lard.
- Light brown sugar – this sugar brings a gentle caramel flavour to the muffins. You can switch for caster sugar if you don’t have any.
- Eggs – use medium or large eggs.
- Milk – you can use any type of milk – skimmed, semi-skimmed, whole, or even oat or soy milk.
- Self raising flour – use self raising rather than plain to ensure your muffins rise.
- Pear – you’ll need one pear for this recipe. It’s best to use a ripe but not soft pear – too soft and the fruit will go mushy.
- Mixed spice – mixed spice is made from ground cinnamon, ginger and allspice. If you can’t get hold of it, use 1 teaspoon ground cinnamon and half a teaspoon each of ginger and allspice.

Notes
- Check your muffins are cooked by sticking a skewer into one. If it comes out clean, the muffins are cooked. If not, leave them in the oven for 5 more minutes before testing again.
