Spiced Pear Muffins Recipe

Ingredients

  • 100 grams butter softened
  • 140 grams light brown sugar
  • 2 eggs
  • 160 ml milk
  • 320 grams self raising flour
  • 1 pear
  • 2 teaspoons mixed spice

Instructions

  • Preheat the oven to 170 degrees Celsius. Prepare a 12 hole muffin tray by filling it with muffin cases.
  • Cream the butter and sugar together in a large bowl. Crack in the eggs and beat until combined.
  • Add the milk, stir well, then fold in the flour. Cut the pear into 1cm cubes and add to the bowl along with the mixed spice. Stir until evenly distributed.
  • Spoon the batter into the muffin cases. Put in the oven and bake for 25 minutes until risen and golden. Serve warm or cold.

Notes

  • Check your muffins are cooked by sticking a skewer into one. If it comes out clean, the muffins are cooked. If not, leave them in the oven for 5 more minutes before testing again.
