These satay style noodles with a delightful peanut butter sauce are made with vegetarian mince (or mushrooms), and are ready in no time – just 15 minutes in fact!
The incredible sauce is made from simply peanut butter, soy sauce, chilli oil and a splash of water. Those ingredients together are absolutely amazing – you have to try it! And if you love it, you’ll enjoy my Baked Chicken Satay and Halloumi Salad Bowl with Satay Dressing.
I’ve used udon noodles here. I just find them so comforting – in fact, this is the most perfect comfort food dish. Quick to whip up in the evening and full of those gorgeous textures and flavours. You’re going to love it!

Ingredients, Substitutions and Variations
- Mince – I use vegetarian mince for this recipe. I find it caramelises nicely and gives a good texture. As mentioned above, mushrooms are also suitable. Just chop chestnut mushrooms into very small chunks and follow the instructions below, replacing the mince with mo.
- Tenderstem broccoli– the thinner your broccoli, the less time you will need to cook it for so if you’re in a hurry, get young broccoli.
- Udon noodles – you can make this dish with medium noodles but honestly, it won’t be as good. Use the straight to wok variety or precook them.
- Peanut butter, soy sauce, chilli oil– these are your satay style sauce ingredients for your noodles. Smooth peanut butter is best (though crunchy will work) and dark soy sauce is preferable.
Top Tips
- Cooking the mince You want your mince to have a good amount of caramelisation and a good crunch, so cook for longer than you would for other mince recipes.
- Adding the noodles Straight to wok noodles don’t always break up right away – they need a bit of heat. To make it more instant, you can dunk them in boiling water for a second before adding to the wok.
How To Cook The Noodles

Cook the mince in oil until it caramelises (5-6 minutes).

Meanwhile, make the satay sauce with peanut butter, hot water, soy sauce and chilli oil (optional).

Add the broccoli, noodles and sauce to the wok with the mince.

Stir fry until well combined and hot.
Vegetarian Satay Udon Noodles

Ingredients
- 1 teaspoon vegetable oil
- 300 grams vegetarian mince or finely chopped chestnut mushrooms
- 200 grams tenderstem broccoli
- 800 grams udon noodles straight to wok variety
- 3 tablespoon peanut butter
- 3 tablespoon soy sauce
- 3 tablespoon chilli oil optional
Instructions
- Oil your wok with the vegetable oil. Put on a medium high heat and add the mince. Cook for around 5 minutes, moving around often with a wooden spoon, until caramelised.
- Chop your broccoli into inch long chunks. Add to the wok and cook for 2 more minutes.
- In the meantime, make your sauce. Put the peanut butter, soy sauce and chilli oil (if using) into a bowl with 100ml boiling water. Stir until combined.
- Add the noodles and sauce to the wok. Cook and stir well for another 5 minutes until the noodles are warmed through and the sauce is coating everything. Serve immediately.
