Leeks are one of my favourite vegetables to cook with.
They’re sweeter and gentler than onions, soften beautifully when cooked, and somehow manage to make almost any dinner feel a little more comforting. Give them a bit of butter, a splash of cream, or something smoky like bacon or chorizo and they turn into something properly delicious.
I end up cooking with leeks constantly, especially in the colder months. They’re perfect in soups, brilliant in pasta sauces, and wonderful tucked into pies and tarts.
If you’ve got a few leeks in the fridge and you’re wondering what to cook with them, here are some of my favourite recipes. From quick weeknight pasta dishes to cosy soups and savoury bakes, there’s plenty here to get you started.
Why Leeks Are Worth Cooking With
Leeks don’t always get the same attention as onions or garlic, but they absolutely deserve a place in your kitchen.
A few reasons I cook with them all the time:
- They’re wonderfully flavourful but gentle – Leeks have a mild, slightly sweet onion flavour that works beautifully in creamy dishes.
- They make comfort food even better – Leeks love butter, cream and cheese, which is why they show up in so many cosy dinners.
- They’re surprisingly versatile – From soups to pasta to tarts, leeks slot easily into all sorts of recipes.
And perhaps most importantly, they’re exactly the sort of ingredient that helps turn a simple dinner into something that feels a little more special.

How to Prepare Leeks Properly
Leeks grow in sandy soil, which means they can hide quite a bit of grit between their layers.
The easiest way to deal with this is to slice them first, then wash them.
Simply trim off the root end and the dark green tops, slice the pale part of the leek into rounds, and rinse them in a bowl of cold water. The sand sinks to the bottom and the clean leeks float to the top.
Once drained, they’re ready to cook.
Flavours That Work Brilliantly With Leeks
Leeks pair particularly well with rich, savoury ingredients.
Some combinations that almost always work include:
- Cream and cheese (think pasta sauces and gratins)
- Smoky flavours like bacon or chorizo
- Seafood, especially crab and white fish
- Herbs like thyme, parsley and dill
- Potatoes, which make classic comfort food combinations
Once you start cooking with leeks regularly, you’ll notice they seem to improve almost everything they touch.

And once you’ve made one leek soup, you’ll probably find yourself coming back to them again and again.
They’re just that good.
