Nutritious, filling and oh so delicious, this warm rice salad with garlic prawns and tahini dressing is a flavourful way to eat well!
With cucumber, bell peppers, beetroot and feta added, there is a wide array of glorious ingredients that will make you feel good!
The tahini dressing is made with tahini (of course), lemon juice, honey, garlic powder, chilli oil and olive oil for a creamy texture and I seriously tasty flavour – once you’ve made it once, you’ll want to have it with everything!
This rice salad is made with packets of microwaveable rice for speed and ease, but you could use your normal dried rice – just cook beforehand as you normally would and serve warm.
Warm Rice Salad – The Ingredients
- Tahini, lemon juice, honey, garlic powder, chilli oil, olive oil – these are your dressing ingredients. They are simply whisked together – no special kitchen tools needed – until smooth. You can make your dressing in advance and store in the fridge for up to a week. Just whisk again before using – if it has become too thick, add a splash of warm water and whisk until it loosens.
- Sesame oil, frozen prawns, garlic – you will use these ingredients to make your garlic prawns. Your prawns are simply fried in the sesame oil until cooked, with the garlic thrown in for the last minute. Delicious!
- Wholegrain microwaveable rice – the great thing about using microwaveable rice is that it’s so convenient – but it is more expensive. As mentioned above, you can use ordinary rice if you prefer. I use wholegrain rice in warm salads like this, but you can use white.
- Bell peppers, cucumber, beetroot, feta – these are your toppings and you can mix and match as much as you need to. Together, they all work really well. You could try adding some grated carrot, spring onions or watercress.

Warm Rice Salad With Garlic Prawns and Tahini Dressing

For the dressing
- 100 g tahini
- 1 lemon
- 1/2 teaspoon garlic powder
- 1 teaspoon runny honey
- 1 tablespoon olive oil
For the salad
- 1 tablespoon sesame oil
- 225 g frozen prawns raw
- 3 cloves garlic
- 250 g whole grain rice microwaveable pouch
- 1 yellow pepper
- 1 orange pepper
- 1/2 cucumber
- 100 g cooked beetroot
- 40 g feta
Instructions
- Start by making your dressing. Put all of the ingredients into a small bowl and whisk together until smooth.
- Heat the sesame oil in a frying pan. Add the prawns and cook until pink all the way through. Peel and finely chop the garlic: add to the pan for the last minute.
- Heat the rice in the microwave according to packet instructions.
- To serve, divide the rice between 2 bowls. Chop the peppers and cucumber into match sticks and place on top. Dice the beetroot and add to the bowls. Add half of the prawns to each bowl. Finish with crumbled feta and a drizzle of the dressing.
