This roasted pepper salad with quinoa and feta is delicious, easy to make and needs just 4 ingredients!
I love to make this salad for lunch. It’s perfect hot or cold, so you could make a big batch at the start of the week and eat it hot one day, then cold for the rest of the week.
The majority of the flavour comes from the roasted peppers, which I get from a jar to make this recipe ridiculously easy. The roasted peppers also bring some of the lovely juices – oil or brine – from the jar, which make a simple but impactful dressing.

Quinoa, Feta and Roasted Pepper Salad – The Ingredients
- Quinoa – quinoa is a lovely, healthy base for this salad and it’s really easy to cook too. If needed, you can switch for couscous (just cook according to packet instructions).
- Roasted peppers – you’ll need around 2 roasted peppers per bowl of salad. The recipe below is for one, but you can easily multiply up using the buttons on the recipe to feed more. Use a jar of roasted peppers – I like these ones.
- Feta – feta is simply crumbled over the top. I like feta for the extra seasoning it brings because it’s salty. You could also use a hard goats cheese.
- Mint – mint brings freshness and zing. You could also make this recipe with parsley.

Quinoa, Feta and Roasted Pepper Salad

- 100 g quinoa
- 40 g jarred roasted peppers (2 roasted peppers from a jar)
- 20 g feta
- 1 tablespoon fresh mint finely chopped
Instructions
- Put the quinoa in a saucepan with 400ml water. Put on a medium heat, bring to the boil and cook for 15-20 minutes.
- Drain the quinoa (if needed), then tip into your bowl.
- Slice the roasted peppers and put on top of the quinoa. Crumble over the feta, then sprinkle over the mint and serve.
