jarred roasted peppers
(2 roasted peppers from a jar)

feta

tablespoon
fresh mint
finely chopped

Instructions
Put the quinoa in a saucepan with 400ml water. Put on a medium heat, bring to the boil and cook for 15-20 minutes.
Drain the quinoa (if needed), then tip into your bowl.
Slice the roasted peppers and put on top of the quinoa. Crumble over the feta, then sprinkle over the mint and serve.
