These easy dan dan noodles topped with pork are simple to make and delicious to eat, plus they’re ready in less than 20 minutes!

If you’re looking for a ‘fakeaway’ dish you can make at home, give this one a try! It has all the flavour you would expect from dan dan noodles, made in the comfort of your kitchen.

If you haven’t had dan dan noodles before, you’re in for a treat. You get a powerful, spicy sesame sauce in the base of your bowl, topped with steaming noodles and pak Choi, all topped off with that hoisin pork and some salted peanuts. You mix it all together in your bowl and enjoy!

This isn’t a traditional pork dan dan noodle recipe – I’ve subbed some of the ingredients for things I can find more easily in my local UK supermarket – but it is truly delicious and perfect for your weeknight noodle cravings.

Easy Dan Dan Noodles – The Ingredients

  • For the sauce – this sauce is made from tahini, chilli oil, soy sauce, light brown sugar, five spice and hot water. It doesn’t need any cooking – just whisk together until smooth.
  • For the pork – we use pork mince for this recipe. It’s quick to cook and has a perfect soft texture. To flavour the pork, we use a simple mixture of rice wine, soy sauce and five spice.
  • Other ingredients– for the noodles, get straight to wok udon noodles. They cook in boiling water in less than a minute. We also have pak Choi for the vegetable, but you could sub for any greens. The dish is topped off with peanuts, and though these are optional they bring a lovely salty crunch.

Top Tips

  1. Get ahead The sauce can be made ahead and will keep in the fridge for up to a week. Make everything else just before you want to eat.
  2. Meat options Though this recipe is for pork dan dan noodles, you could easily switch the pork mince for beef mince or even turkey mince. It’ll be just as delicious.
  3. Chilli levels Dan dan noodles are supposed to be spicy! This recipe is entry level, though (my toddler was going to eat it). Feel free to add more chilli oil to the sauce to taste – just add little by little and taste each time to make sure you’re not making it too spicy.

Ingredients
  

For the sauce

  • 2 tbsps tahini
  • 4 tbsps chilli oil
  • 4 tbsps soy sauce
  • 1 tbsp light brown sugar
  • 1 tsp five spice
  • 150 ml hot water

For the pork

  • 1 tbsp rice wine
  • 1 tsp soy sauce
  • 1 tsp five spice
  • 1 tbsp vegetable oil
  • 500 g pork mince

Other ingredients

  • 250 g pak Choi
  • 600 g udon noodles straight to wok
  • 60 g peanuts to serve

Instructions
 

  • To make the sauce, put all of the ingredients in a small bowl and whisk until smooth. Put to one side.
  • For the pork, put the soy sauce, rice wine and five spice into a small bowl. Whisk.
  • Put the vegetable oil in a wok over a high heat. When hot, add the pork and stir fry until it turns white. Add the soy sauce, rice wine and five spice mix, stir. Turn off the heat.
  • Cut the pak Choi into small chunks, discarding the ends. Bring a large pot of water to the boil. Add the noodles and pak Choi. Cook for one minute, then drain.
  • To serve, spoon the sauce into your bowls. Top with noodles and pak Choi, then pork. Finish with a sprinkle of peanuts.
