To make the sauce, put all of the ingredients in a small bowl and whisk until smooth. Put to one side.
For the pork, put the soy sauce, rice wine and five spice into a small bowl. Whisk.
Put the vegetable oil in a wok over a high heat. When hot, add the pork and stir fry until it turns white. Add the soy sauce, rice wine and five spice mix, stir. Turn off the heat.
Cut the pak Choi into small chunks, discarding the ends. Bring a large pot of water to the boil. Add the noodles and pak Choi. Cook for one minute, then drain.
To serve, spoon the sauce into your bowls. Top with noodles and pak Choi, then pork. Finish with a sprinkle of peanuts.
