Ingredients

For the sauce

  • 2 tablespoons tahini
  • 4 tablespoons chilli oil
  • 4 tablespoons soy sauce
  • 1 tablespoon light brown sugar
  • 1 teaspoon five spice
  • 150 ml hot water

For the pork

  • 1 tablespoon rice wine
  • 1 teaspoon soy sauce
  • 1 teaspoon five spice
  • 1 tablespoon vegetable oil
  • 500 grams pork mince

Other ingredients

  • 250 grams pak Choi
  • 600 grams udon noodles straight to wok
  • 60 grams peanuts to serve

Instructions

  • To make the sauce, put all of the ingredients in a small bowl and whisk until smooth. Put to one side.
  • For the pork, put the soy sauce, rice wine and five spice into a small bowl. Whisk.
  • Put the vegetable oil in a wok over a high heat. When hot, add the pork and stir fry until it turns white. Add the soy sauce, rice wine and five spice mix, stir. Turn off the heat.
  • Cut the pak Choi into small chunks, discarding the ends. Bring a large pot of water to the boil. Add the noodles and pak Choi. Cook for one minute, then drain.
  • To serve, spoon the sauce into your bowls. Top with noodles and pak Choi, then pork. Finish with a sprinkle of peanuts.
