Chocolate Orange Cookies (No Butter)

Chewy, sweet and utterly delicious – these chocolate orange cookies are an absolute winner.

They’re easy to make (with or without a food processor- I make them without) and they have that incredible chocolate orange surprise inside.

They’re also made with no butter. This was an accident, in a way – I wanted to make cookies, but had no butter in the house. I decided to experiment, and this was the wonderful result. Because of this, you could easily make these cookies vegan by substituting the eggs and chocolate orange.

Ingredients, Substitutions and Variations

  • Olive oil – vegetable oil would work equally as well.
  • Light brown sugar – you could use caster sugar or other white sugar, but you won’t get that same rich, caramel flavour.
  • Eggs, plain flour, baking powder, baking soda – keep these ingredients as they are for best results.
  • Chocolate orange – I used Terry’s chocolate orange (of course!) but any orange flavoured chocolate will work just as well here.

Top Tips

  1. Change it up

    If you like, rather than having one large piece of chocolate orange in the centre, you could cut the chocolate orange up into chocolate chip size pieces and stir through the mix before baking.

  2. Shaping the cookies

    This mix is sticky, and if you try to use your hands too much to stuff the cookies it will become very, very sticky and difficult. Try to use the spoon as much as possible and only use your fingertips to shape the dough around the chocolate orange.

  3. Cooking the cookies

    You’ll know the cookies are ready when they are starting to turn golden. They should be slightly puffed up and cracked. When you remove them from the oven, they’ll sink down and harden.

Ingredients
  

  • 220 ml olive oil
  • 400 g light brown sugar
  • 2 eggs
  • 320 g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 70 g chocolate orange

Instructions
 

  • Preheat the oven to 180 degrees Celsius. Prepare three baking sheets by lining them with baking parchment.
  • In a large bowl, mix together the butter and oil until combined. Crack the eggs in and beat the mixture until it has lightened in colour.
  • Tip in the flour, baking powder and baking soda. Fold together until it is all combined.
  • Cut the chocolate orange into 15 pieces.
  • Wet your hands. Use a tablespoon to scoop up some of the mixture. Press a piece of chocolate orange into it, then use your fingers to wrap the mixture around it, covering it completely. Ease the mixture off the spoon and onto one of the baking trays.
  • Repeat with the rest of the mixture, putting 5 cookies on each tray with plenty of space around them.
  • Put in the oven for 9-10 minutes until starting to colour. Remove from the oven and leave to cool on the trays.
