This simple tuna with rice, greens and wasabi dressing is easy to make, tastes great and makes you feel good too.
Tuna is one of those fish that some people can shy away from cooking, but it’s so easy – it needs barely any time to cook and (as long as you have good quality tuna) you can can serve it as rare as you like.
I’ve served this with sticky rice – you can either use Thai sticky rice or sushi rice – which is a great texture with the tuna. I’ve also used a selection of greens for some bright freshness.
The star of the show, though, is that wasabi dressing. It’s glorious, with spice, sweetness and salt. It’ll be strong if you taste it by itself, but with the sticky rice and tuna it absolutely shines.
Ingredients, Substitutions and Variations
- Wasabi, soy sauce, sesame oil, rice vinegar, honey – these are the ingredients for your dressing.
- Sticky rice – use Thai sticky rice or sushi rice.
- Tuna – get good quality, fresh tuna.
- Vegetables – I used a mixture of edamame beans, sugar snap peas and kale. You can use any mixture of green vegetables that you like.
Top Tips
- Get ahead
You can make the wasabi dressing ahead – it will keep in the fridge for 3 weeks. The rest is best served immediately.
- Cooking the tuna
You can get away with either searing the tuna very briefly, or cooking it all the way through. Just work to your preference.
- Change it up
If you only have tinned tuna, you could use that instead of fresh. Break it up with your fork and drizzle over that wasabi dressing – it’ll be fab!

- 2 fillets of raw tuna
- 200 g sticky rice
- 200 g green vegetables e.g. edamame, sugar snap peas, kale
- 2 tbsps olive oil
For the wasabi dressing
- 1 tbsp wasabi paste
- 1 tbsp soy sauce
- 2 tsps runny honey
- 1 tsp rice vinegar
- 1 tsp sesame oil
Instructions
- Start by cooking your rice. Put a large pan of water on to boil, add the rice and cook for 10 minutes. Drain.
- To cook your vegetables, pan fry them in one of the tablespoons of olive oil for 5 minutes, stirring regularly.
- Season your tuna with salt and pepper. Heat the remaining olive oil in a frying pan and add the tuna. Cook over a medium heat for 1-3 minutes on each side, depending on how you like your tuna cooked.
- To make the dressing, mix all of the ingredients in a bowl until well combined.
- To serve, pile rice and vegetables into bowls, top with tuna and drizzle over as much wasabi dressing as you like.
