This seared tuna rice bowl with greens and zingy wasabi dressing is one of those dinners that feels fresh, healthy and incredibly satisfying.
You’ve got beautifully cooked tuna, fluffy sticky rice, crisp green vegetables and a punchy Japanese-style wasabi dressing that ties everything together.
It’s the kind of meal that looks impressive in a bowl but is actually surprisingly simple to make! In fact, once your rice is cooking the rest of the dish comes together in about ten minutes.
Which makes it absolutely perfect for busy evenings when you want something that feels a bit special but don’t want to spend ages in the kitchen.
This recipe is loosely inspired by the kind of tuna rice bowls you might find in Japanese cooking, where simple ingredients are paired with bold dressings and perfectly cooked fish.
The tuna is lightly pan seared so it stays tender and juicy inside, the vegetables bring colour and freshness, and the wasabi dressing delivers a little heat, sweetness and salt.
It’s the sort of dinner that leaves you feeling satisfied but still energised afterwards, which is always a win.
If you’re looking for a quick and healthy dinner recipe, this tuna rice bowl is definitely one to add to your regular rotation!
Why This Tuna Rice Bowl Works So Well
There are a few reasons this dish is such a great weeknight dinner.
First, it’s incredibly balanced. You’ve got:
- protein from the tuna
- carbohydrates from the rice
- fibre and freshness from the vegetables
- flavour from the dressing
Everything works together to create a meal that feels complete.
Second, it’s very quick to cook. Fresh tuna only needs a minute or two in the pan to develop a golden crust while staying tender in the centre. That means the entire dish can be on the table in around twenty minutes.
And finally, the wasabi dressing really makes the dish shine. When tasted on its own it can feel quite punchy – spicy, salty and slightly sweet – but when drizzled over the rice and tuna it becomes absolutely delicious.

Ingredients, Substitutions and Variations
- Tuna fillets – Fresh tuna is the star of this dish. It has a beautiful meaty texture and cooks incredibly quickly. When seared briefly in a hot pan it develops a lovely golden crust while remaining tender inside. If you’re buying fresh tuna, look for fillets that are firm, deep pink and smell fresh rather than fishy. You can cook the tuna rare, medium or fully cooked, depending on your preference.
- Sticky rice – Sticky rice works wonderfully in rice bowls because it holds together nicely and soaks up the dressing. Thai sticky rice or sushi rice are both excellent choices. If you prefer, you could also use jasmine rice or even brown rice.
- Green vegetables – This recipe uses a mixture of green vegetables for freshness and colour. Some good options include edamame beans, sugar snap peas, kale and broccoli. Use whatever combination you have in the fridge.
- Olive oil – A little olive oil is used to cook the vegetables and sear the tuna. You could also use a neutral oil such as vegetable oil or sunflower oil.
- The Wasabi Dressing – The dressing is where the magic happens! It’s made with a simple combination of wasabi paste, soy sauce, honey, rice vinegar and sesame oil. The wasabi provides heat, the soy sauce adds saltiness, the honey balances things with sweetness, and the sesame oil brings a lovely nutty aroma.
Together they create a dressing that’s bright, punchy and incredibly moreish. It’s also a brilliant dressing to keep in the fridge for other meals. Try it drizzled over salads, rice bowls or roasted vegetables.

How to Cook Tuna Perfectly
Tuna can feel intimidating to cook if you’re not used to it, but it’s actually one of the easiest fish to prepare. The key thing to remember is that tuna cooks extremely quickly.
Start by seasoning the tuna with salt and pepper. Heat a frying pan until hot, add a little oil and then place the tuna in the pan.
For rare tuna, cook for about one minute on each side.
For medium tuna, cook for around two minutes per side.
If you prefer your tuna cooked all the way through, simply leave it a little longer.
The outside should develop a light golden crust while the inside remains tender and juicy.
Make Ahead Tips
This recipe is best assembled fresh, but you can still prepare a few elements ahead of time.
The wasabi dressing can be made in advance and stored in the fridge for up to three weeks.
You can also cook the rice earlier in the day and reheat it before serving.
The tuna itself is best cooked just before eating so it stays tender and juicy.
Why This Is a Brilliant Healthy Dinner
If you’re trying to cook more balanced meals during the week, this tuna rice bowl is a fantastic option.
Tuna is naturally rich in protein and omega-3 fatty acids, while the vegetables provide fibre and nutrients.
The result is a meal that feels fresh, nourishing and full of flavour.
And because it comes together so quickly, it’s ideal for those evenings when you want something healthy but don’t want to spend ages cooking.
Give it a try – you might just find it becomes one of your new weeknight favourites!
