This smoked sausage tray bake with potatoes, peppers, broccoli and a chive yoghurt makes for a delicious but surprisingly easy dinner.
Tray bakes are a brilliant go-to dinner for busy evenings, and this one’s a winner. Smoked sausage is such an incredible, powerful flavour that works beautifully with the vegetables, and doesn’t need you to put much effort in.

The chive yoghurt brings moisture and ties everything together without being overpowering – yum!
I developed this recipe (along with my One Pan Smoked Sausage Fried Rice) when I had some smoked sausages that I just didn’t know what to do with. This was a delightful way of using them, so if you’re in a similar predicament, give this recipe a go!

The Ingredients
- Smoked sausages – you can use any smoked sausages, made from any variety of meat (e.g. beef, pork, chicken). I use these ones.
- Baby potatoes and onion – these are your ‘must use’ vegetables to make this a success – the rest can be mix and matched depending on what you have in the fridge.
- Peppers and tender stem broccoli – you can use any colour bell peppers, I like to use a mix. If you want to change up the vegetables, you can switch these – mushrooms and courgettes would work well too.
- Greek yoghurt and chives – for the chive yoghurt.
Smoked Sausage Tray Bake

Ingredients
- 270 grams smoked sausages
- 1 kilogram baby potatoes
- 1 onion
- 2 tablespoons olive oil
- 2 bell peppers any colour
- 150 grams tender stem broccoli
- 4 tablespoons greek yoghurt
- 1 tablespoon chives fresh, finely chopped
Instructions
- Preheat the oven to 200 degrees Celsius (180 fan)
- Cut the potatoes in half and put in a large ovenproof pan or dish. Slice the sausages thickly and put them on top. Peel and roughly chop the onion – scatter over the top. Drizzle over the olive oil and a pinch of salt and pepper. Put in the oven for 30 minutes until turning golden.
- Chop the peppers into 1 inch pieces. Remove the pan from the oven and add the peppers and tender stem broccoli (you can leave the broccoli whole). Return to the oven for another 10-15 minutes until the peppers and broccoli are cooked, but still al dente.
- Meanwhile, mix the yoghurt and chives together in a small bowl.
- Remove the tray bake from the oven, drizzle the yoghurt over the top, then serve.
