This smoked sausage tray bake with potatoes, peppers and broccoli is exactly the sort of dinner I turn to on busy evenings when I want something delicious but very easy to cook.
Everything roasts together in a single tray: golden potatoes, smoky sausage, sweet peppers and tender broccoli. The whole thing is finished with a simple chive yoghurt drizzle, which adds freshness and ties everything together beautifully.
Tray bakes are some of my favourite easy weeknight dinners because they require very little hands-on cooking. Once everything is in the oven, you can mostly leave it alone.

The Ingredients
- Smoked sausages – you can use any smoked sausages, made from any variety of meat (e.g. beef, pork, chicken). I use these ones.
- Baby potatoes and onion – these are your ‘must use’ vegetables to make this a success – the rest can be mix and matched depending on what you have in the fridge.
- Peppers and tender stem broccoli – you can use any colour bell peppers, I like to use a mix. If you want to change up the vegetables, you can switch these – mushrooms and courgettes would work well too.
- Greek yoghurt and chives – for the chive yoghurt.
Tips for the best sausage tray bake
Tray bakes are simple, but a few small techniques make them even better.
- Give the potatoes a head start – Potatoes take longer to cook than most vegetables, which is why they go into the oven first. This helps them become golden and slightly crisp before the softer vegetables are added.
- Don’t overcrowd the tray – If the ingredients are packed too tightly together they will steam rather than roast. Spread everything out in a large tray or roasting dish so the vegetables have space to brown.
- Add softer vegetables later – Vegetables like peppers and broccoli cook more quickly than potatoes. Adding them halfway through ensures they stay tender and vibrant rather than becoming overcooked.
How to make this tray bake even easier
This recipe is already simple, but a few small shortcuts can make it even more weeknight-friendly.
- Use pre-washed baby potatoes to avoid extra prep.
- Buy pre-cut broccoli if you’re short on time.
- Make the chive yoghurt in advance and keep it in the fridge.

Smoked Sausage Tray Bake

Ingredients
- 270 grams smoked sausages
- 1 kilogram baby potatoes
- 1 onion
- 2 tablespoons olive oil
- 2 bell peppers any colour
- 150 grams tender stem broccoli
- 4 tablespoons greek yoghurt
- 1 tablespoon chives fresh, finely chopped
Instructions
- Preheat the oven to 200 degrees Celsius (180 fan)
- Cut the potatoes in half and put in a large ovenproof pan or dish. Slice the sausages thickly and put them on top. Peel and roughly chop the onion – scatter over the top. Drizzle over the olive oil and a pinch of salt and pepper. Put in the oven for 30 minutes until turning golden.
- Chop the peppers into 1 inch pieces. Remove the pan from the oven and add the peppers and tender stem broccoli (you can leave the broccoli whole). Return to the oven for another 10-15 minutes until the peppers and broccoli are cooked, but still al dente.
- Meanwhile, mix the yoghurt and chives together in a small bowl.
- Remove the tray bake from the oven, drizzle the yoghurt over the top, then serve.

This dish stores well, which makes it good for meal prep or next-day lunches. Fridge:Store leftovers in an airtight container for up to 3 days. Reheating:
