Creamy, comforting and oh-so-delicious, this sausage and broccoli pasta is one of those crowd-pleasing recipes you’ll make time and again.
I got the idea for making this when it was stormy outside. Ideally, I would have headed to my local Italian restaurant for a big bowl of their delicious pasta, but it was too wet and windy. So, I decided to make my own version of one of their classic dishes at home.
Sausage and broccoli are a match made in heaven, and they work beautifully together in this pasta dish. A dash of cream and a handful of grated Parmesan and you’ve got a winner!
Sausage and Broccoli Pasta – The Ingredients
- Onion and garlic – because no good Italian recipe is right if it doesn’t have plentiful onion and garlic to start it off.
- Sausages – you can use any sausages you like here, but make sure they’re good quality. Try to go for Italian for an authentic dish!
- Broccoli– use a nice big head of broccoli. I use the stalk as well as the florets in this dish to bring even more broccoli flavour.
- White wine – to deglaze. Completely optional. If you don’t want to use it, switch with water.
- Cream – double cream is best for a properly rich creamy flavour.
- Parmesan – or similar, to finish the dish off.
- Pasta – any short pasta will work. I used spirali.

Sausage and Broccoli Pasta

- 1 tablespoon olive oil
- 1 onion
- 3 garlic cloves
- 5 sausages
- 1 head of broccoli
- 100 ml white wine
- 150 ml double cream
- 80 g parmesan grated
- 300 g spirali pasta
Instructions
- Bring a large pot of water to the boil. Add the pasta and cook according to packet instructions. Drain and set aside.
- Heat the oil in a large frying pan over a medium heat. Add the peeled and chopped onion and garlic. Cook for 2 minutes, until starting to soften.
- Break the sausages into small pieces with your hands. Add to the pan, and cook for a further 7-8 minutes, stirring regularly, until cooked. Finely chop the stem of the broccoli and add to the pan after 3 minutes have passed.
- Tip in the wine and allow to reduce for 3-4 minutes, before adding the broccoli florets and 100ml water. Allow to soften – this will only take a minute or two – then add the cream.
- Remove from the heat and stir in the pasta and Parmesan. Season according to taste with salt and pepper.
