Cherry Chocolate Cookies

Chocolate cookies are ALWAYS a winner – I’ve never met anyone who doesn’t like them (have you?), and these cherry chocolate cookies are my favourite ones yet.

Cakey, soft and moreish – these are the kind of cookies you’ll want to keep on eating! The mix of chocolate and cherries is delightful, and slightly grown up (though they’re still sweet).

Cookies might be one of my favourite things in the world to bake, particularly ones like this that just don’t really go wrong. They’re simple, use ingredients that are easy to get hold of, and you get delicious cookies to eat at the end!

Cherry Chocolate Cookies – The Ingredients

These ingredients are all straightforward and can be found in your local shop (hopefully!):

  • Unsalted Butter – I specified unsalted butter here BUT salted butter would be fine too. It’ll change the dimension of the flavour, but not in a bad way!
  • Brown sugar brown sugar adds a depth of flavour – almost nutty and treacle-like – that you would miss if you didn’t use it. At a push, though, switch for caster sugar.
  • Eggs – medium are best. These provide the liquid as well as the binding element for your batter. If, on mixing, your batter is crumbly and doesn’t come together, it could be that your eggs were too small. Add a dash of water and stir to bring it together.
  • Cocoa powder – for the all important chocolate element! Use the best one you can find for superior results.
  • Self-raising flour – don’t switch to anything else, or the cookies won’t have the right consistency.
  • Baking powder – for that all important cakiness. Don’t switch!
  • Glacé cherries – use undyed if you can, but if you can’t get hold of them then the dyed ones will work just fine.

Cooking the Cookies

Combining the ingredients in the batter is straightforward. Just follow the steps and add them in the right order. You’ll end up with a thick batter. Make sure it’s mixed well so that the cocoa powder is spread evenly throughout it all – otherwise you’ll end up with patchy cookies!

When you bake them, be sure to give them plenty of space on the baking tray. Cook them in batches if that’s easier – just don’t squeeze them onto the tray.

When you take them out of the oven, they will be VERY soft (probably too soft to pick up). Let them cool completely on the baking tray before you try to move them. I know, it’s torture!

When they’re fully cooled, that consistency is going to be perfect and they will fall apart in your mouth. Delicious!

These take around 30 minutes to make (plus cooling time) and will make 12 (very) large cookies.

Cherry Chocolate Cookies

Ingredients
  

  • 200 g unsalted butter
  • 300 g brown sugar
  • 2 medium eggs
  • 80 g cocoa powder
  • 300 g self-raising flour
  • 1 tsp baking powder
  • 200 g glace cherries get the undyed ones if you can

Instructions
 

  • Preheat the oven to 180 degrees celsius.
  • Cream the butter and sugar in a large bowl, then beat in the eggs until fully combined.
  • Sieve the flour and cocoa powder, then fold this and the baking powder into the butter and sugar mixture.
  • Roughly chop the cherries and stir them into the mixture until evenly spread.
  • Grab a non-stick baking tray (you’ll probably need two, or cook the cookies in shifts) and spoon the mixture onto it, making sure there’s a gap of 2-3 inches between each dollop.
  • Bake in the oven for 12 minutes. They will still be very soft when you take them out, but leave them to cool completely and they will be the perfect consistency. Enjoy with a cup of coffee. Yum!
