My Best Tips for Easy Pasta Dinners
A few simple habits make pasta dinners much better.
- Cook the pasta properly Always aim for al dente. Slightly under rather than over is the safer direction, especially if the pasta is being tossed in a hot sauce afterwards.
- Save pasta water This is the single most useful pasta trick. That cloudy, starchy water helps loosen sauces and makes them cling to the pasta beautifully.
- Match the pasta shape to the sauce Chunkier sauces work well with shapes like rigatoni, penne and tortiglioni. Lighter or silkier sauces love linguine, tagliatelle and spaghetti.
- Don’t overcomplicate it Some of the best pasta dinners are the simplest ones! A few good ingredients, cooked well, will always beat a muddled sauce with seventeen different things in it.

How to Choose the Right Pasta Shape
This isn’t a strict rule, but it does help.
- Short shapes like rigatoni, penne and tortiglioni are great for chunky sauces with vegetables, cheese or bits of meat.
- Long pasta like linguine and tagliatelle works well with lighter, silkier sauces.
- Baked pasta likes sturdy shapes that hold up well in the oven.
- One-pot pasta tends to do best with shapes that cook fairly evenly and don’t turn mushy too quickly.
The good news is that if dinner is on the line and all you’ve got is one half-open packet in the cupboard, almost any pasta can be persuaded to do the job.
