Everyone needs a brilliant burger recipe in their repertoire and this is mine – the classic cheeseburger. It’s simple, utterly delicious and the sort of meal you will want to make over and over again.
With just a handful of ingredients, my cheeseburgers let the flavours sing – there’s nothing fussy here.
Give these a go on your next burger night – I promise you won’t be disappointed!
Ingredients, Substitutions and Variations
- Minced beef – my burger patties are made with just minced beef and salt and pepper – that’s it. Because of this, it’s really important that you get good beef mince. Ideally, go to a butcher and ask them to mince some steak for you. You’ll get the best results this way! You also need some fat in there – don’t be tempted to go the lowest fat mince. The fat brings the flavour.
- Brioche buns – the sweetness of brioche buns works really well with these burgers. They also hold up well with the juiciness! You could substitute for any other burger buns, though.
- Port salut cheese – port salut is THE BEST cheese to use on cheeseburgers, no exceptions. However, I concede that it is perhaps not very easy to get everywhere on the planet. So, some reluctant substitutes are Gouda, Edam and mild cheddar. You want it mild and melting.
- Gherkins – you can use sliced burger pickles but I love the sweet sharpness that gherkins bring. They pack a punch!
- American mustard – I love mustard on burgers, but a mild mustard works really well here which is why I used American mustard. You wouldn’t want the mustard to overpower the rest of the ingredients.
- Burger sauce – I used a premade burger sauce, but you could make your own. This is a good recipe.
Top Tips
- Make in advance
You can make your burger patties in advance. Store them in the fridge for up to 48 hours.
- Cooking the burgers
I’ve specified cooking the burgers in a griddle pan on the hob in my recipe. However, you can also cook them under the grill (high heat for 15-16 minutes, turning regularly) or on the barbecue.
- Watch the buns!
When toasting the buns, you only want them to get warm and slightly crisp. Keep an eye, because they can catch quickly.

- 680 g beef mince
- 2 tbsp olive oil
- 4 slices port salut cheese
- 8 gherkins sliced thinly lengthways
- 4 brioche buns
- 8 tsps American mustard
- 8 tsps burger sauce
Instructions
- Preheat the oven to 200 degrees Celsius
- Start by making your burger patties. Put the mince in a bowl and add 1tsp of salt and 1tsp black pepper. Use your hands to work the seasoning into the meat, then press into four tight balls. Flatten each ball into a burger shape.
- To cook the patties, put the oil in a griddle pan over a medium-high heat. Add the patties and cook for 12-14 minutes, turning regularly, until the outsides are caramelised and the insides are cooked through and juicy.
- Slice the brioche buns in half.
- When the patties are done, remove from the pan and put on a baking sheet. Top each burger with a slice of cheese and put in the oven for 2-3 minutes until the cheese is melted.
- Put the buns in the oven for 1-2 minutes until lightly toasted.
- To compile the burgers, put 2 tsps burger sauce on the bottom bun of each burger. Top with the patty and add a pile of gherkin slices. Put 2 tsps American mustard on the inside of each top brioche bun half, and place that on top. Enjoy!
