I LOVE quick and easy meals, and meals that you can prep in advance are perfect for this. What’s better than past you treating future you to a premade dinner that you just need to heat up when you get home from work?
Some of my favourite meal prep meals are my Slow Cooker Pulled Chicken Burritos (make them up and throw each portion in the freezer), Quick and Easy Quinoa, Tomato, Cucumber and Olive Salad (you can make LOADS really easily and keep in the fridge) and One Pan Mediterranean Roast Chicken and Vegetables with Garlic Yoghurt (makes great protein filled work lunches for the week).
