This nutritious breakfast is ready in just ten minutes, completely delicious and something a bit different! If you’re bored of your usual breakfast options, give this Mexican style French toast a go.
This is your regular PSA that French toast does not need to be sickly sweet, covered in syrup and icing sugar and packed full of cream. In fact, traditional French toast is simply bread dipped in beaten egg, fried in butter. That’s it – no fuss.
This recipe takes that excellent base and adds a few extras – like cheese, avocado and smoked paprika – to make a really tasty dish that maintains the integrity of the initial dish.
This Mexican French toast recipe is one you could easily have for breakfast regularly – it’s full of good, nourishing things and I hope you love it as much as I do.

Ingredients, Substitutions and Variations
- Sourdough bread – the better your bread is, the better your French toast is going to be. However, you can use any type of bread.
- Eggs – you’ll need two medium or large eggs.
- Smoked paprika and garlic powder – give that Mexican style hit of flavour. You could also add a little chilli powder and cumin if you fancy it.
- Grated cheese – cheddar works well. You want a cheese that melts nicely and forms a crust.
- Avocado – adds that creamy goodness.
- Spring onions – optional, but brings a pow that will certainly wake you up in the morning! You could also sprinkle over a handful of chopped coriander and some crumbled feta.
- Sweet chilli sauce – to bring everything together. Optional.

Top Tips
- Mixing the egg Make sure you beat the egg mixture well. You don’t want any clumps of spices – they should be evenly distributed through the mix.
- Cooking the toast The trickiest bit is flipping the toast so that the cheese stays on it. Be careful and take your time.
- Go for non stick For best results, use a good non stick frying pan.
Mexican Style French Toast

Ingredients
- 1 tbsp olive oil
- 2 slices sourdough bread
- 2 eggs
- 1 tsp smoked paprika
- ¼ tsp garlic powder
- 10 g grated cheese
- ½ avocado
- 3 spring onions
- ½ tbsp sweet chilli sauce
Instructions
- Crack your eggs into a large bowl. Add the smoked paprika and garlic powder and beat well. Season with salt and pepper.
- Put the slices of bread into the egg mix and let them soak it up, then turn over and do the same on the other side.
- Put the oil in a non stick frying pan over a medium heat. Add the slices of eggy bread. Top each one with the grated cheese.
- Cook for 2-3 minutes until golden, then carefully flip so that the cheese stays connected. Cook for another 2-3 minutes then remove from the pan. Place on a plate, cheese side up.
- Slice the avocado and spring onions. Put the avocado on top and sprinkle over the spring onions. Drizzle over the sweet chilli sauce. Done!
