Crack your eggs into a large bowl. Add the smoked paprika and garlic powder and beat well. Season with salt and pepper.
Put the slices of bread into the egg mix and let them soak it up, then turn over and do the same on the other side.
Put the oil in a non stick frying pan over a medium heat. Add the slices of eggy bread. Top each one with the grated cheese.
Cook for 2-3 minutes until golden, then carefully flip so that the cheese stays connected. Cook for another 2-3 minutes then remove from the pan. Place on a plate, cheese side up.
Slice the avocado and spring onions. Put the avocado on top and sprinkle over the spring onions. Drizzle over the sweet chilli sauce. Done!
