This warming ginger loaf cake with lime icing is the perfect cake for snacking on, taking for picnics, or even serving as dessert.
Ginger is one of my favourite flavours – I love its heat. This cake is packed full of ginger flavour, with both stem ginger and ground ginger, and topped with sweet lime icing for the perfect balance. It’s delicious.
This recipe is also very easy to make and very forgiving – so great for making with kids.

Lime and Ginger Cake – The Ingredients
- Light brown sugar – light brown sugar brings a gentle caramel flavour that works nicely with the ginger.
- Butter – use salted or unsalted. Make sure it’s softened.
- Eggs – three medium or large eggs are needed here.
- Self-raising flour – for the perfect rise.
- Treacle – optional, but it does bring a lovely rich flavour.
- Stem ginger – get stem ginger in syrup. You’ll think you’re using a lot of it – and you are! But that’s what makes the cake so good. Cut as large or small as you like.
- Ground ginger – just to up the ginger taste.
- Limes – for the icing. You’ll need the zest and juice.
- Icing sugar – for the icing.
Top Tips
- Baking the cake
The cake can take between 45 minutes – 75 minutes to cook, depending on the ferocity of your oven. Keep an eye on it and test it with a skewer – stick it in the middle of the cake, if it comes out clean the cake is done.
- Leave to cool before icing
If you don’t, the icing won’t set properly.
- The shape of the cake
If you don’t want to make a loaf cake, you can use this recipe to make a circular cake instead. Just be sure to line your tin well with baking parchment.

Lime and Ginger Cake

- 140 g light brown sugar
- 140 g butter softened
- 3 eggs
- 225 g self-raising flour
- 1 tbsp black treacle
- 100 g stem ginger finely chopped
- 1 tsp ground ginger
- 150 g icing sugar
- 2 limes
Instructions
- Preheat the oven to 170 degrees C. Line a 2 lb loaf tin with baking parchment or a loaf tin liner.
- Tip the sugar and butter into a large bowl. Cream together until light and fluffy.
- Crack the eggs into the bowl one at a time and beat until combined.
- Fold in the flour carefully, making sure that all of the flour is incorporated into the batter.
- Add the treacle, stem ginger and ground ginger. Mix.
- Tip the batter into the prepared cake tin. Bake for 1 hour until risen and cooked through.
- Remove from the oven and leave to cool completely.
- Mix together the lime juice, most of the lime zest and the icing sugar in a bowl. Drizzle the icing over the cake, then sprinkle over the rest of the lime zest.
