If you’re looking for a delicious and easy way to cook octopus, this recipe is for you. Baked octopus with garlic butter potatoes is seriously simple and utterly moreish!
I got the idea for this dish from Spain. We visited a market in Madrid and this is a copy of one of the dishes we ordered. Perfectly cooked octopus with just the right amount of bite, served over potatoes cooked in garlic and butter until soft and falling apart.
The dish came with plentiful bread for dunking, and I’d recommend you do the same – there is nothing better than that butter, which is so garlicky it’s almost spicy. Yum!
Just a note that this recipe is made with prepared octopus. If you are new to cooking with octopus, I’d suggest that you do this. It’s a great way in to cookery, and helps you to understand the flavours.

Ingredients, Substitutions and Variations
- Potatoes – use standard white potatoes.
- Garlic – this recipe needs lots of garlic! I use a whole head. You can also add some fresh chilli if you like.
- Chicken stock – or 2/3 pint of water and a chicken stock cube.
- Butter – use unsalted so that you can control the salt levels yourself.
- Octopus – buy pre boiled octopus to make this dish easiest – you can get it vacuum packed like this. If you would prefer to prepare it yourself, I’d recommend following this recipe. The baking warms the octopus through and gives you perfectly cooked results.
- Sourdough bread – to serve. You can use any kind of bread, but make sure it’s good for dipping in that delicious butter garlic sauce!

Top Tips
- Slicing the potatoes The thickness of your potatoes affects the cooking time – so if you want to cook the dish more quickly, just cut them more thinly.
- Checking the dish is cooked To check if the potatoes are cooked, insert a knife into one – they should be completely soft with no resistance.
- Get ahead You can cook the potatoes in advance, cool them and leave them in the fridge for 24 hours. When you’re ready to eat, add the octopus to the top and pop in the oven.

Baked Octopus with Garlic Butter Potatoes

Ingredients
- 5 white potatoes
- 1 bulb garlic
- ⅔ pint vegetable stock hot
- 25 g butter
- 250 g octopus pre boiled
- 4 slices sourdough bread to serve
Instructions
- Preheat the oven to 160 degrees Celsius.
- Peel your potatoes. Cut them into slices 1cm thick. Peel the garlic cloves.
- Lay the slices over the bottom of a small ovenproof dish. Place the garlic cloves evenly around.
- Pour over the stock and dot over the butter. Put in the oven for 40 minutes, until the potatoes are really soft.
- Cut the octopus into chunks approximately 1 inch in size. Remove the potatoes from the oven and place the octopus on top. Sprinkle with salt and pepper and baste with the buttery juice from the dish. Turn the oven up to 190 degrees Celsius and put the dish back in the oven for 10 minutes.
- Remove from the oven and serve with sourdough bread on the side.
