Perfect for snacking or as a side dish, these corn fritters take just 15 minutes to make and taste incredible!

They have a hint of Thai flavour from the fish sauce and are wonderful served with a sweet chilli sauce for dipping, but they’d equally work well with a range of other dishes too.
I like to make a batch for us to snack on while watching TV – they are so quick and easy to make that they’re an excellent lazy day snack.

The Ingredients
- Flour, eggs – these are the ingredients that make the batter, just like with pancakes. Use plain flour and medium or large eggs.
- Caster sugar – you could use palm sugar if you like, or omit completely.
- Fish sauce – fish sauce adds a nice depth of flavour, but if you don’t fancy it you can switch with half a teaspoon of salt.
- Garlic – fresh garlic is best, but you could use half a teaspoon of garlic powder.
- Sweetcorn – tinned sweetcorn works really well. You could switch for defrosted frozen sweetcorn.
- Sunflower oil – for frying. You could also use vegetable oil.
- Sweet chilli sauce – for dipping, optional.
15 Minute Corn Fritters

Easy corn fritters served with sweet chilli sauce for dipping
Ingredients
- 100 grams plain flour
- 2 eggs
- 1 teaspoon caster sugar
- 1 teaspoon fish sauce
- 1 clove garlic
- 260 grams tinned sweetcorn drained weight
- 2 tablespoons sunflower oil
- 40 grams sweet chilli sauce to serve
Instructions
- Put the flour, eggs, sugar, fish sauce, peeled garlic cloves and half of the sweetcorn into a food processor. Blend until smooth. Stir in the rest of the sweetcorn.
- Heat the oil in a nonstick frying pan over a medium heat.
- Use a tablespoon to put spoonfuls of the batter into the frying pan (you will need to do this in batches). Cook on one side for 2-3 minutes until golden, then flip and cook on the other side for another 2-3 minutes.
- Remove from the frying pan and drain on kitchen roll.
- Serve immediately with the sweet chilli sauce for dipping.
