Put the flour, eggs, sugar, fish sauce, peeled garlic cloves and half of the sweetcorn into a food processor. Blend until smooth. Stir in the rest of the sweetcorn.
Heat the oil in a nonstick frying pan over a medium heat.
Use a tablespoon to put spoonfuls of the batter into the frying pan (you will need to do this in batches). Cook on one side for 2-3 minutes until golden, then flip and cook on the other side for another 2-3 minutes.
Remove from the frying pan and drain on kitchen roll.
Serve immediately with the sweet chilli sauce for dipping.
