Hearty Soups

When it’s cold outside (or you just need a bit of comfort), there’s nothing better than a proper, hearty soup. The kind that fills you up, warms you through and makes you glad you didn’t order a takeaway. These are the soups I make when I want dinner to feel simple but still like something special – easy and full of big, bold flavour.

You’ll find plenty of my go-tos here: One Pot Chicken, Chorizo and Butter Bean Stew, smoky Leek and Chorizo Soup, rich Easy Smoked Fish Chowder, and the creamy Chorizo Gnocchi with Peas. There’s also the fragrant Thai Green Noodle Soup with Pan Fried Sea Bass, a comforting One Pot Chorizo and Chickpea Stew, and even a simple Easy Ramen Recipe for when you fancy a quick noodle fix.

Every soup here has been developed with one goal: maximum flavour, minimal faff. They’re perfect for weeknights when you want something homemade without overthinking it. The kind of dinners that make you slow down for a minute and actually enjoy your food.
