Lunch salads should never feel like an obligation, they should be something you actually want to eat. This is my collection of salads that prove lunch can be quick, colourful and satisfying, without a mountain of prep or a long ingredient list. They’re the ones I make for myself when I need something fresh, filling and a little bit uplifting in the middle of a busy day.
There’s plenty to pick from: Roasted Carrot and Beetroot Salad (an instant favourite), Halloumi Salad Bowl with Satay Dressing, or the super easy 5 Ingredient Halloumi and Couscous Salad. If you’re after something vibrant, try the Pomegranate, Feta and Chickpea Salad or Sweetcorn and Black Bean Salad. And for those make-ahead lunches, Quinoa and Lentil Salad and Chorizo and Feta Giant Couscous Salad are my go-tos.
