Crack the eggs into a bowl. Add salt and pepper, then beat with a fork until combined.
Place the pieces of bread into the egg (you may need to do this one at a time depending on the size of your bowl). Let them soak up the egg for 30 seconds, then turn them over and do the same on the other side.
Put the olive oil in a frying pan over a medium heat. Add the bread, and let them cook for 2 minutes on one side until golden. Flip and cook for another 2 minutes.
Place the toast on a plate and drizzle over the hot honey. Enjoy!
