Peel and chop your onion. Cut each fig into 8 equal pieces.
Put the onions and figs onto a baking tray. Add the drained green olives and 5 sprigs of thyme. Drizzle over 1 tablespoon of olive oil and sprinkle with salt and pepper. Put in the oven for 20 minutes.
Meanwhile cook the pasta according to packet instructions until al dente.
Drain the pasta. Toss with the figs, olives and onion. Drizzle in 2 tablespoons of olive oil and stir.
Serve into bowls and top with a spoonful of ricotta and a sprinkle of the remaining thyme.
