Cherry Muffins Recipe

A super simple cherry muffin recipe using frozen cherries

Ingredients

  • 100 grams unsalted butter, softened
  • 140 grams caster sugar
  • 2 eggs
  • 160 ml milk
  • 320 grams self raising flour
  • 150 grams frozen cherries

Instructions

  • Preheat the oven to 180 degrees Celsius.
  • Cream the butter and sugar together in a bowl mixing until fluffy.
  • Break the eggs into the bowl and then beat until everything is combined.
  • Mix in the milk, stir until combined.
  • Fold in the flour until well combined.
  • Cut the cherries in half, then stir them into the mixture.
  • Put 12 muffin cases into a muffin tray. Spoon the mix into the muffin cases and bake in the oven for 25 minutes or until a skewer inserted into the middle comes out clean.
