Blue Cheese and Asparagus Omelette

With just 4 ingredients and 15 minutes, you can make this incredible blue cheese and asparagus omelette.

Ingredients

  • 1 tablespoon olive oil
  • 4 asparagus spears
  • 2 eggs
  • 25 grams blue cheese

Instructions

  • Slice the asparagus spears finely, discarding any woody parts.
  • Crack the eggs into a bowl and beat with a fork until well mixed. Add the asparagus spears and a pinch of salt and pepper - stir.
  • Heat the oil in a frying pan over a medium heat. Pour in the eggs and move the frying pan around so that the eggs evenly cover the whole bottom of the pan.
  • Crumble the blue cheese over the top of the egg. Cook for 3-4 minutes, until the egg is mostly cooked, then use a fish slice to fold it in half. Cook for another minute, then transfer to a plate. Done!
