Slice the asparagus spears finely, discarding any woody parts.
Crack the eggs into a bowl and beat with a fork until well mixed. Add the asparagus spears and a pinch of salt and pepper - stir.
Heat the oil in a frying pan over a medium heat. Pour in the eggs and move the frying pan around so that the eggs evenly cover the whole bottom of the pan.
Crumble the blue cheese over the top of the egg. Cook for 3-4 minutes, until the egg is mostly cooked, then use a fish slice to fold it in half. Cook for another minute, then transfer to a plate. Done!
